The Quest for the Perfect Dinner Roll!

Ok...so for a few years now, I have been on a quest. The goal-to make the perfect dinner roll! Making a good dinner roll is a fine art; One not to be taken lightly and not for the faint of heart. I thought I would share the recipe that was passed to me and I have declared to be the best as of yet. Here are some I made this morning.

As you can see they came out lovely and take my word for it...they tasted lovely as well. Of course I didn't have 4...only a pig would eat that many in one sitting...sheesh!

Potluck Pan Rolls

Ingredients

1 package active dry yeast
1/3 cup plus 1 t sugar
1 1/2 cups water, divided
1/2 cup melted butter
2 eggs
1/4 cup nonfat dry milk powder
1 1/4 t salt
5 1/2 to 6 cups flour

Instructions

In a bowl, dissolve yeast and 1 teaspoon sugar in 1/2 cup warm water. Let the yeast activate. Add butter, eggs, milk powder, salt, 3 cups flour and remaining sugar and water. Beat on medium speed for 3 minutes or until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-11/2 hours. Punch dough down.  Divide into 27 pieces; shape into balls. Place 18 balls in a greased 9x13 baking pan and remaining balls in a greased 9 in square baking pan (or use a jelly roll pan, which is what I did). Cover and let rise until doubled, about 45 minutes. Bake at 375 for 17-20 minutes or until golden brown. Rub a stick of butter on top. Cool. Enjoy.
